Gamma-irradiation, water activity (a,) and incuhation temperature wcre found to affect the production of tenuazonic acid (TZA) by Alternaria alternata in tomato paste and juice. By increasing the irradiation doses, the dry weight as well as TZA decreased greatly until complete inhihition at 4 kGy. Greatest production of TZA occurred at 0.98 aw (57.5 psfg and 26.3 p d g ) for both tomato paste and juice, respectively, at 25ยฐC. Changing temperature and aw altercd the relative amounts of TLA prtxluccd in tomato paste und juice by unirradiated and irradiated conidia of A. alternata. Only trace amount of TZA was detected at 0,98 a, (1.50 psfg) by 3 kGy-irradiated conidia in tomato paste, while it was inhihitcd complctcly in juice. Increasing gamma-irradiation doses and decreasing water activities decreased greatly or inhihited TZA production in both tomato paste and juice.

## Abstract Barley was inoculated with conidia of __Aspergillus parasiticus__ NRRL 2999, and at 0ยฐC was left to equilibrate at three moisture levels: 17, 20 and 25%. Gamma irradiation at five doses, 0, 50, 100, 200 and 400 krad, was applied to the grain either soon after moisture equilibration (3 d
