## Abstract Advanced glycation endproducts (AGEs) accumulate on protein deposits including the β‐amyloid plaques in Alzheimer's disease. AGEs interact with the “receptor for advanced glycation endproducts”, and transmit their signals using intracellular reactive oxygen species as second messengers.

## Abstract Mushrooms are known for their immune‐modulating and anti‐tumour properties. The polysaccharide fraction, mainly β‐glucans, is responsible for the immune‐modulating effects. Fungal β‐glucans have been shown to activate leukocytes, which depend on structural characteristics of β‐glucans.
