The experimental conditions described constitute a fast and comparatively simple process for removing the alkaloids from bitter lupin seed in a closed system thus preventing contamination of the environment. The alkaloids extracted are easily recovered after avaporation from their aqueous solutions.
The large-scale application of the process described should be of interest especially in areas where hydroelectric or solar energy is available.
The availability of debittered whole lupin seed would permit the food industry to produce various sweet or salty snack foods. Moreover, the high protein content of the debittered seeds, and its relatively high lysine level suggest the use of lupin meal for improving the nutritional value of bread and pastries, or as a supplement to plant proteins rich in sulfurcontaining amino acids. Such mixtures, when fortified with vitamins and minerals, should have great potential for feeding of infants, children and adolescents in developing areas of the world. L i t e r a t u r e
