✦ Synopsis

The quantitative estimation of the protein content in milk by means of ultraviolet spectral photometry. Part 6. Review on methods in the region from 185-260 nm, on double-wavelength-measurements and the suitability of both for protein estimations A review is given on methods for the quantitative determination of protein content in foods, body fluids or aqueous solutions by absorbance measurements in the region between 185 and 260 nm or by employment of double-wavelength-spectroscopy. Investigations on milk protein fractions, polyamino acids and skimmed milk indicated, that the differences in absorbance 205-233, 210-233, 215-233 and 235-280 nm as well as measurements at a wavelength between 205 and 215 nm are suitable for biological samples, which have a varying amino acid composition. The selection of one of these methods should bear in mind the disturbing influences of sample matrix.
