C o n c l u s i o n s a) In 1 : 1 mixtures of oleic and linoleic acids, the peroxidation pattern of the latter is dominant, and this situation also prevails in safflower oil. b) At 6S°C, the best protection is offered by y-tocopherol, with a-close behind and 6-considerably lower. c) Safflower oil is insufficiently protected by its own natural content of tocopherols. Doubling the tocopherol content offers slight though distinct additional protection.
d) Artificial enhancement of the cephalin content of safflower oil likewise enhances protection slightly. e) Stabilisation of safflower oil with 0.02°10 of synthetic phenolic antioxidants (BHA, BHT) and 0.05 O h of synergists like phosphoric or citric acids cuts down to one-tenth the rate of POV-increase.
