The marketing departments of food-industry companies are guided by mass-marketing operators and the reactions of the operators' customers. Accordingly, there has been a gradual shift of the desserts on supermarket shelves. Previously lumped together with the bakery items, desserts have now found their place on the refrigerated-products shelving, and with fresh pastry. This trend, which began in the early 1990s, is currently on the rise.
