## Abstract The production of galacto‐oligosaccharides (GOS) from lactose by __A. oryzae__ β‐galactosidase immobilized on cotton cloth was studied. The total amounts and types of GOS produced were mainly affected by the initial lactose concentration in the reaction media. In general, more and large
