Samples of white cabbage. cauliflower, cucumber, onion, tomato, carrot, strawberry, black and red currant, blueberry, lingonberry, apple, banana, orange, and grape were collected from wholesale markets and food processing plants and then pooled. Calcium. magnesium. potassium, iron, manganese, and zinc contents of the pooled samples were determined by flame atomic absorption after wet digestion in nitric acid. The means, numbers of pooled samples, minimum and maximum values. and coefficients of variations are presented. Statistically significant differences were detected between domestic and imported products in some samples. The differences were not systematic, and the ranges for every product were considerable. The contents of elements detected were close to those reported earlier in Finland and elsewhere. ci 1993 Academic Press. Inc.
