## Abstract Chitins produced via a conventional chemical route as well as from a new biological process were modified to increase the efficiency of enzymatic deacetylation reactions for the production of novel biological chitosan. These modified chitins were reacted for 24 h with extracellular fung

β¦ Synopsis
A method for monitoring enzymatic deacetylation processes of natural or artificial chitin substrates as well as N-acetylchitooligosaccharides by the direct determination of the acetate released is described. Furthermore, a new assay is presented for the determination of chitin deacetylase activity employing hexa-N-acetylchitohexaose [(GIcNAc) 6 ] as substrate and measuring the acetate released enzymatically. The K m value for (GIcNAc) 6 has been determined as well as the pH and temperature dependence of activity and the thermostability of the enzyme. Finally, initial studies on the effectiveness of the enzyme on various chitin and chitosan substrates are presented.

## Abstract **BACKGROUND:** Chitoβoligosaccharide (COS) is generally known to possess many specific biological functions, especially antibacterial activity, depending on its size. To prepare a specific size range of COS, however, has proved difficult. The aim of this study was to establish a method
The composition and sequence of 2-acetamido-2-deoxy-beta-D-glucose (GlcNAc) and 2-amino-2-deoxy-beta-D-glucose (GlcN) residues in partially N-deacetylated chitosans, prepared under homogeneous and heterogeneous conditions, have been determined by 1H-n.m.r. spectroscopy. It was necessary to depolymer
