Butter fat solid fraction/rapeseed oil mixtures were interesterified in the presence of Cundidu qlindruceu lipase as catalyst.The changes in the triglyceride composition were followed through quantitative determination of triglycerides with different acyl carbon number and level of unsaturation by high resolution gas chromatography. The inter-esterification decreased the proportions of trisaturated triglycerides and increased those of monoene triglycerides in the acyl carbon number range 44-52. The triglyceride compositions of reaction products were similar to the triglyceride composition calculated according to random distribution. The melting and crystallisation properties of the reaction products were determined by DSC method. The melting curves of reaction products showed narrower melting ranges than untreated mixtures, and lower proportions of fat melting at high temperature range.
