β¦ Synopsis
One of the main targets of high-value oils is focused on polyunsaturated fatty acids (PUFAs) that have been incorporated into several products ranging through feeds, foods, cosmetics and pharmaceuticals. Biotechnological strategies based on solid state fermentation have been used to enrich cereals with PUFA as a major food source. Under appropriate conditions, lower filamentous fungi were able to transform numerous cereal substrates to products containing various n-6 and n-3 PUFAs.
