Abstract

This work introduces aspects of Biological Chemistry to students of non‐related careers and, in some way, tries to develop abilities that have remained unexplored up to the moment the students face this subject. This aim was successfully achieved as shown in the results obtained with the biological model of invertase activity in immobilized Saccharomyces cerevisiae. By optimizing time and temperature and understanding the hydrolysis yield, we managed to introduce sugar and biopolymer chemistry concepts.
