## Abstract A complex of chitosan (CS‐40) and nisin (CS‐40/nisin) was prepared and characterized with Fourier transform infrared spectroscopy and thermal analysis (thermogravimetry, differential thermogravimetry, and differential scanning calorimetry). The results show that the complex formed mainl
