## Abstract Frozen samples of Antarctic krill (__Euphausia superba__ Dana) were found to contain 71Β·4% moisture, and on a dry matter basis 24Β·6% lipid, 49% protein (N Γ— 6Β·25), 2Β·5% chitin, and 9Β·8% ash. Fatty acids from the crude lipid fraction were made up of 43Β·8% saturated, 32Β·8% mono‐unsaturate
