Recent developments in neutron scattering allow us to see how the addition of salt to an aqueous amphiphile induces structural changes that may initiate salting out. A relatively simple process is revealed in which anionic salt bridges form between the alcohol molecule polar groups. These ion bridges drive an increase in the water exposure of the non-polar surface, leading to their salting out by the hydrophobic effect.
