A flow-mJectlon system IS proposed for the determrnatlon of meat freshness, based on the simultaneous deternunation of polyammes and hypoxanthme A putrescme oxldase reactor and xanthme oxldase reactor were Incorporated at fured positrons m a flow system, which was based on the sphttmg of the flow after sample mlectlon and subsequent confluence before reaching the peroxldase electrode Because each channel has a different residence time, two peaks were obtained The first peak corresponded to the total polyamme concentration (putrescme, cadaverme and spermlchne) the second peak to hypoxanthme The cahbratlon graphs were linear m the range 1 x 10W6-5 x 10m4 M The detection limit was 0 5 x 10m6 M for polyammes and hypoxantlune The measurement of polyammes and hypoxanthme contents m porcine lom meat could be performed at a rate of 25 samples per hour with satlsfactoIy preclslon (< 1 5% R S D )
