The paper describes an adaptation of the POPE and STEVENS method for a rapid assessment of proteolytic enzymes activity and protein hydrolysis intensity in raw materials of a marine origin. The adaptation involves substituting the titration by a fast colorimetric technique. A statistical treatment applied to the data supplied by the POPE and STEVENS method and by the modified one proved their total equivalency. Because of its accuracy,'the modified method may be applied to routine assays.
