The presence of trypsin inhibitors is demonstrated in cotyledonary albumins of Vigna unguiculata by cross-electrophoresis against trypsin and by kinetic measurements. These inhibitors are isolated by selective trapping on insoluble trypsin. On the other hand, evidence is given showing that cotyledon
