✦ Synopsis
An assay procedure for microbial lipases is proposed in which the substrate is an emulsion of triolein (trioleoyl glycerol), The fatty acids released at 30°C are titrated with a pH stat at a pH of 7.7. Although the activity values obtained with this method are lower than those determined with the olive oil method, the results are highly reproducible and the preparation of the substrate is straightforward.
