Abstract

The reaction between calcium hydroxide and cane sugar under different condition of temperature mid time of heating has been studied, with particular reference to the amount of a pure derivative of lactic acid that can ho isolated front the reaction. The zinc salt has been used for this purpose, and zinc lactate corresponding to 71% of the theoretical yield baa been obtained.
